Recipe of the Week: Grilled Amaretto Peaches

This is a deliciously simple dessert for people on the go. You can mix and match the recipe with your favorite fruit depending on the time of the year. I love peaches at their peak of flavor; I like to buy them from a local fruit farm and after I marinate them, I grill them and serve them with homemade gelato. A sophisticated and extremely simple recipe that is perfect for warm weather entertaining or as a perfect ending to a meal while the grill is still hot. Serves eight. (Chef’s tip: Choose firm medium-sized free-stone peaches for grilling, cut in half leaving the skin intact, marinate them for at least 15 minutes and grill them on a cooler grill either at the beginning or the end of your grilling time.)

4 fresh, free-stone peaches

1 teaspoon cinnamon

1/4 cup brown sugar

1/4 cup amaretto liquor

2 tablespoons unsalted butter, melted

Pinch of salt

Wash peaches, cut in half and remove pit. In a small bowl, combine butter, cinnamon, brown sugar, amaretto and salt. Place peaches in a large zip lock bag with butter mixture, squeeze and toss around to coat peaches very well. Pre-heat grill to medium heat.

Grill peaches over medium heat, about five minutes per side, or until you have nice grill marks. Remove from the grill. Serve peaches with gelato.
