Paganini to host cooking classes, wine pairing dinner
Chef Loretta Paganini will present a week-long series of cooking demonstration classes, along with a wine pairing dinner, at The Community House in January. The following classes are scheduled:
• Jan. 25 from 10 a.m. to 1 p.m: A Touch of Limoncello
Discover the great taste of Limoncello, the Italian sweet liquor that has become the world’s favorite after dinner drink. It is not only used as a drink, but as a secret flavor booster in many dishes. Learn how to make your own Limoncello from scratch. Menu: tomato caprese salad with Limoncello dressing; homemade linguini pasta with creamy Limoncello clam sauce; veal scaloppini piccata with artichokes, capers, peppers in lemon sauce; roasted lemon-rosemary potatoes; sorrento delizia strawberry Limoncello cake; and Limoncello ricotta biscotti.
• Jan. 26 from 10 a.m. to 1 p.m: Viva Italia
Spend a day in the kitchen and discover the traditional techniques for creating Italian recipes. From the best ingredients to the perfect seasoning, discover the true marriage of good taste. Menu: panzanella tomato salad; mushroom and truffle strudel with fontina sauce; potato gnocchi with bolognese meat sauce and ricotta salata; apple and pecorino stuffed pork tenderloin wrapped in pancetta; mashed potatoes; pan-roasted vegetables in padella; and chocolate caramel crostata.
• Jan. 27 from 10 a.m. to 1 p.m: An Italian Feast
Experience an explosion of flavors as you discover authentic Italian cooking in popular regional dishes. Celebrate an Italian Feast and taste Italy’s best culinary treasures. Menu: piedina flat bread with goat cheese, fig jam and prosciutto; tomato, burrata and arugula salad with saporoso balsamic vinaigrette; handmade spinach fettuccini with arrabbiata sauce; flank steak florentine pinwheels with spinach and roasted red peppers; zucchini ribbons with salsa verde; potato crisps; hazelnut semifreddo with chocolate sauce; and rosemary cookies.
• Jan. 28 from 10 a.m. to 1 p.m: A Splash of Wine
Discover the world’s favorite drink — enhance and intensify the flavor of dishes by just adding a splash. A technique used to season, marinade and tenderize food. Discover what type of wine works best and how to use it in recipes. Enjoy a wine tasting and sample a variety of dishes. Menu: mixed greens, berries and almond salad with champagne vinaigrette; creamy risotto with shrimp and zucchini; homemade pappardelle ribbons with meat bolognese sauce; chicken marsala with porcini and baby portobello; roasted potatoes; berry and sherry trifle cake; and sweet taralli wine cookies.
• Jan. 29 from 10 a.m. to 1 p.m: Showstopper Supper
Learn the techniques for creating a real showstopper meal for your next dinner party and sample everything prepared. Impress family and friends with sensational dishes. Menu: crab cakes with roasted red pepper remoulade sauce; lobster ravioli in vodka sauce; puff pastry and prosciutto-wrapped beef Wellington with port demi glacé sauce; twice-baked rainbow potatoes; brussels sprouts tian with pancetta and herbs; white chocolate and raspberry crème brulee; and French macaroons.
In addition, Paganini will host a “Life is a Cabernet: Food and Wine Pairing” on Jan. 24 from 5 to 8 p.m. A fun and delicious night, discover why cabernet sauvignon is the world’s favorite wine for food pairing. Dinner will feature five cabernets from around the world in different styles, with Paganini’s inspired menu, for an informative and enjoyable discussion of the selections and food pairings.
The menu includes roasted duck, warm goat cheese and onion jam crostini; radicchio, arugula and endive salad with hazelnut dressing; meat filled agnolotti pasta with al sugo sauce; roasted prime rib in garlic butter; green beans gratin; herbed roasted potatoes; chocolate sacher torte with orange sauce; and chocolate truffles.
