Recipe of the Week: Strawberry Oatmeal Bars

With all of us spending more time at home in this new world reality of social distancing, we are rediscovering baking and cooking from scratch. I want to share this easy recipe for fast and fabulous strawberry oatmeal bars. Not only are they delicious, but the aroma coming from your oven will make your kitchen smell like a bakery. Enjoy them without guilt since they are packed with healthy oats. Eat them for breakfast or at anytime you need a little treat. They can make be made in advance and their decadent taste will change your view of the world. Stay safe and healthy! Makes 16 bars. (Chef tip: Mix all of your dry ingredients together first in a bowl, then slowly add the coconut oil.)


3/4 cup firmly packed brown sugar

1 cup whole wheat flour

1/2 cup all-purpose flour

1 teaspoon baking soda

1/8 teaspoon salt

1 1/2 cup rolled oats

2/3 cup coconut oil

1 teaspoon cinnamon

Water, if needed


1/2 cup rolled oats

1/2 cup All purpose flour

1/4 cup coconut oil

1 teaspoon cinnamon

1/4 cup brown sugar

Water, if needed

Strawberry preserves:

1 1/2 cups strawberries, sliced

2/3 cup sugar

2 tablespoon lemon juice

Pulse strawberries in a food processor. Bring strawberries, sugar and lemon juice to a boil. Reduce heat to a simmer and cook until thick and bubbly. Cool to room temperature.

Preheat oven to 350F. Mix all topping ingredients. Set aside for topping.

Mix all base ingredients together, by hand, until moist but still crumbly. Press base into a 9-by-13-inch baking dish to create a crust going all the way up the sides. Top with strawberry preserves and then crumble topping mixture over the preserves. Press the crumb topping gently into the preserves.

Bake for 30-40 minutes or until light brown. Cool completely before cutting. Cut into 2-by-3-inch pieces.
