Loretta Paganini cooking classes still taking registrations

Chef Loretta Paganini will teach a week-long cooking series on Jan. 28 to Feb. 1 at The Community House, at 2173 Periwinkle Way, Sanibel. The cost is $95 per person per class.

The following sessions still have openings:

- Jan. 28 from 2 to 5 p.m. Love Bites (hands-on class)

Discover the Italian version of tapas. The small plate sharing is a concept that in Italy is called cicchetti or stuzzichini or antipasti. Menu: arancini balls with peas and mozzarella; grilled shrimp spiedini; vegetable frittelle with a variety of sauces; sausage-stuffed sweet peppers; figs, gorgonzola and prosciutto; roasted tomato garlic pizza fritta; chicken and artichoke bites; chocolate zeppole donuts; and coconut almond macaroons

- Jan. 29 from 2 to 5 p.m. Pucker-Up for Lemon (hands-on class)

Celebrate the refreshing taste of lemon with these delicious dishes. Menu: goat cheese and crab stuffed strudel with tarragon citrus sauce; strawberry green salad with lemon dressing; herbed ravioli with asparagus cream sauce; veal scallopini piccata with artichoke sauce; roasted fingerling potatoes; individual lemon strawberry tiramisu; and lemon biscotti

- Jan. 30 from 10 a.m. to 1 p.m. Perfect Pairing (demonstration class)

Whether you use wine, liquor or beer in your cooking, you have to find the perfect pairing. Discover how to pair a variety of foods with the right spirit for the perfect flavor combinations. Menu: mojito shrimp scampi; garden salad with riesling dressing; penne pasta in vodka sauce; chicken saltinbocca with mushroom and wine sauce; bourbon glazed pork chops; Kirsch cherry brownies; and bananas foster with ice cream

- Feb. 1 from 10 a.m. to 1 p.m. Backyard Bash (demonstration class)

Enjoy the outdoors with this fabulous party designed to let you and your friends visit over a great meal. Colorful accessory ideas and fresh flowers will set the stage for a delicious make-ahead menu. Menu: mozzarella-stuffed tomatoes with balsamic glaze; grilled peaches, prosciutto and arugula salad; hot smoked salmon with corn salad; garden vegetable pasta salad; marinated flatiron steak with mango salsa; frozen key lime pie; and vanilla bean affogato
